🍰 Flourless Chocolate Cake

Ingredients
- 125 g dark chocolate (70 % cocoa content)
- 100 g butter
- 150 g cane sugar
- 3 eggs (L)
- 40 g cocoa powder
- cocoa powder (for dusting)
Instructions
- 1. Preheat your oven to 180°C (350°F) for conventional heating. If using a fan oven, set it to 160°C (320°F). For gas ovens, use setting 2–3.
- 2. Roughly chop the chocolate into small pieces.
- 3. Fill a pot with some water and heat it until it is hot but not boiling.
- 4. Place a heatproof bowl containing the chocolate pieces and butter over the pot. Ensure the bowl does not touch the water.
- 5. Let the chocolate and butter melt slowly. Stir occasionally.
- 6. Remove the bowl from the pot.
- 7. Stir the sugar into the warm chocolate mixture.
- 8. Lightly beat the eggs in a separate small bowl.
- 9. Add the beaten eggs to the chocolate mixture and stir them in.
- 10. Add the cocoa powder and mix it thoroughly into the batter.
- 11. Line a 20 cm (8 inch) springform pan with baking paper.
- 12. Pour the chocolate batter into the prepared pan.
- 13. Flatten the surface of the batter slightly with a spoon or spatula.
- 14. Place the pan in the preheated oven.
- 15. Bake the cake for 25 to 30 minutes.
- 16. Remove the cake from the oven.
- 17. Let the cake cool in the pan for 5 minutes.
- 18. Release the springform clips.
- 19. Run a knife carefully around the edge of the cake to loosen it from the pan.
- 20. Remove the ring of the springform.
- 21. Carefully turn the cake out onto a serving plate.
- 22. Mix powdered sugar and cocoa powder in a small bowl.
- 23. Dust the finished cake with the sugar-cocoa mixture.
