🍽️ Moist Chocolate Cake with Marzipan and Plums

Ingredients
- 200 g Marzipan almond paste
- 80 g soft butter
- 1 pinch salt
- 0.5 vanilla pod (scraped seeds)
- 7 egg yolks
- 100 g preserved plums (jar)
- 80 g flour
- 60 g cocoa powder
- 7 egg whites
- 160 g sugar
- 200 g dark chocolate couverture (60-70% cocoa content)
- 30 g cocoa powder
Instructions
- 1. Preheat the oven to 180 degrees Celsius (conventional heat).
- 2. Grease a 24 cm (9.5 inch) springform pan with butter.
- 3. Dust the greased pan with breadcrumbs and shake off the excess.
- 4. Knead marzipan raw mass, butter, a pinch of salt, and vanilla paste in a bowl until smooth.
- 5. Add the egg yolks and whisk the mixture until frothy.
- 6. Drain the plums and dice them into fine cubes.
- 7. Gently fold the plum cubes into the marzipan mixture.
- 8. Sift flour and cocoa powder together into a small bowl.
- 9. Whip the egg whites with sugar until stiff peaks form.
- 10. Fold the egg whites into the marzipan mixture in batches.
- 11. Let the flour-cocoa mixture trickle in slowly and fold it in gently.
- 12. Pour the batter into the prepared pan and smooth the surface.
- 13. Bake the cake for about 50 minutes in the preheated oven.
- 14. Perform the toothpick test to check for doneness.
- 15. Turn out the finished cake from the pan and let it cool.
- 16. Melt the chocolate coating over a hot water bath.
- 17. Let the melted coating cool until it begins to thicken.
- 18. Spread the thickened coating thickly over the cake with a spatula.
- 19. Let the coating set completely.
- 20. Dust the finished cake with cocoa powder at the end.
