  1. 1. Preheat the oven to 180 degrees Celsius (conventional heat).
  2. 2. Grease a 24 cm (9.5 inch) springform pan with butter.
  3. 3. Dust the greased pan with breadcrumbs and shake off the excess.
  4. 4. Knead marzipan raw mass, butter, a pinch of salt, and vanilla paste in a bowl until smooth.
  5. 5. Add the egg yolks and whisk the mixture until frothy.
  6. 6. Drain the plums and dice them into fine cubes.
  7. 7. Gently fold the plum cubes into the marzipan mixture.
  8. 8. Sift flour and cocoa powder together into a small bowl.
  9. 9. Whip the egg whites with sugar until stiff peaks form.
  10. 10. Fold the egg whites into the marzipan mixture in batches.
  11. 11. Let the flour-cocoa mixture trickle in slowly and fold it in gently.
  12. 12. Pour the batter into the prepared pan and smooth the surface.
  13. 13. Bake the cake for about 50 minutes in the preheated oven.
  14. 14. Perform the toothpick test to check for doneness.
  15. 15. Turn out the finished cake from the pan and let it cool.
  16. 16. Melt the chocolate coating over a hot water bath.
  17. 17. Let the melted coating cool until it begins to thicken.
  18. 18. Spread the thickened coating thickly over the cake with a spatula.
  19. 19. Let the coating set completely.
  20. 20. Dust the finished cake with cocoa powder at the end.
