  1. 1. Grease the small ramekins (soufflé dishes) thoroughly on the inside with butter.
  2. 2. Lightly dust the greased ramekins with flour and shake out any excess flour.
  3. 3. Preheat the oven to 200 degrees Celsius (convection is not recommended, use top and bottom heat).
  4. 4. Roughly chop the chocolate coating (compound chocolate).
  5. 5. Melt the chocolate in a heatproof bowl placed over a pot of hot, but not boiling, water (bain-marie).
  6. 6. Remove the bowl from the heat and let the chocolate cool down briefly.
  7. 7. Stir the butter into the slightly cooled chocolate.
  8. 8. Ensure that the chocolate and butter have approximately the same temperature.
  9. 9. Separate the eggs: Carefully remove the yolk from the egg white.
  10. 10. Whisk the egg yolks with half of the sugar in a bowl over the hot water bath until creamy.
  11. 11. Make sure the egg yolk mixture does not get too hot.
  12. 12. Remove the bowl from the water bath and let the mixture cool down to body temperature.
  13. 13. Stir the chocolate-butter mixture into the cooled egg yolk mixture.
  14. 14. Whisk the egg whites until stiff.
  15. 15. Add the remaining sugar to the stiffly beaten egg whites and continue whisking until dissolved.
  16. 16. Add the beaten egg whites to the chocolate mixture.
  17. 17. Sift the flour over the mixture.
  18. 18. Gently fold the egg whites and flour into the chocolate mixture using a spoon or spatula.
  19. 19. Fill the mixture evenly into the prepared ramekins.
  20. 20. Bake the soufflés in the preheated oven for about 15 minutes.
  21. 21. Carefully turn out the soufflés from the ramekins onto plates.
  22. 22. Garnish the soufflés with chocolate shavings.
  23. 23. Dust the soufflés with powdered sugar.
  24. 24. Serve the soufflés immediately, as they deflate quickly.
