🍰 Airy Chocolate Soufflé

Ingredients
- 6 Soufflé ramekins (or cups)
- Powdered sugar
- 120 g dark chocolate
- 50 g butter
- 50 g flour
- 300 ml milk
- 50 g sugar
- 3 egg yolks
- 4 egg whites
- Powdered sugar (for the ramekins)

Instructions
- 1. Grate the chocolate very finely.
- 2. Melt the butter in a pot.
- 3. Stir the flour into the butter until it becomes fragrant (this is called 'sweating').
- 4. Deglaze the mixture with the milk.
- 5. Bring the mixture to a boil while stirring constantly.
- 6. Remove the pot from the heat.
- 7. Stir in the grated chocolate and two-thirds of the sugar.
- 8. Whisk the egg yolks.
- 9. Fold the egg yolks into the chocolate mixture.
- 10. Beat the egg whites until very stiff.
- 11. Mix the remaining sugar into the egg whites.
- 12. Stir three tablespoons of the egg white mixture into the chocolate base to loosen it.
- 13. Gently fold in the rest of the egg whites to keep the mixture airy.
- 14. Fill the mixture into butter-greased and sugar-coated soufflé molds.
- 15. Lightly dust the finished soufflés with powdered sugar before serving.
