  1. 1. Grate the chocolate very finely.
  2. 2. Melt the butter in a pot.
  3. 3. Stir the flour into the butter until it becomes fragrant (this is called 'sweating').
  4. 4. Deglaze the mixture with the milk.
  5. 5. Bring the mixture to a boil while stirring constantly.
  6. 6. Remove the pot from the heat.
  7. 7. Stir in the grated chocolate and two-thirds of the sugar.
  8. 8. Whisk the egg yolks.
  9. 9. Fold the egg yolks into the chocolate mixture.
  10. 10. Beat the egg whites until very stiff.
  11. 11. Mix the remaining sugar into the egg whites.
  12. 12. Stir three tablespoons of the egg white mixture into the chocolate base to loosen it.
  13. 13. Gently fold in the rest of the egg whites to keep the mixture airy.
  14. 14. Fill the mixture into butter-greased and sugar-coated soufflé molds.
  15. 15. Lightly dust the finished soufflés with powdered sugar before serving.
