🍰 Fluffy Chocolate Soufflés

Ingredients
- 1 tbsp Butter
- 1 tbsp Sugar
- 50 ml Milk
- 1 tsp dark cocoa powder
- 1 piece Orange peel (organic)
- 4 tbsp Sugar
- 100 g dark chocolate couverture
- 3 Eggs (size M)
- Salt
- 1 tbsp Flour
Instructions
- 1. Preheat the oven to 170 degrees Celsius with top and bottom heat.
- 2. Grease the ramekins with butter.
- 3. Evenly coat the greased ramekins with sugar.
- 4. Place the milk, cocoa powder, and orange peel in a small saucepan.
- 5. Sprinkle 2 tablespoons of sugar over the milk mixture.
- 6. Bring the milk to a boil.
- 7. Chop the chocolate into small pieces.
- 8. Remove the saucepan from the heat.
- 9. Remove the orange peel from the milk.
- 10. Let the chocolate pieces melt in the hot milk.
- 11. Separate the eggs into yolks and whites.
- 12. Add a pinch of salt to the egg whites.
- 13. Whisk the egg whites until stiff peaks form.
- 14. Slowly stir the remaining sugar into the egg whites.
- 15. Stir the egg yolks into the liquid chocolate mixture.
- 16. Add the flour to the chocolate mixture and stir until combined.
- 17. Divide the egg whites into two portions.
- 18. Gently fold the first portion of egg whites into the chocolate cream.
- 19. Gently fold in the second portion of egg whites.
- 20. Distribute the mixture evenly into the prepared ramekins.
- 21. Place the ramekins into a large ovenproof dish.
- 22. Pour about 2 to 3 centimeters of hot water into the large dish.
- 23. Place the dish on the lower rack in the oven.
- 24. Bake the soufflés for about 30 minutes.
- 25. Dust the finished soufflés with powdered sugar if desired.
- 26. Serve the soufflés immediately.
