  1. 1. Heat water in a pot until it is hot, but do not let it boil.
  2. 2. Place a heatproof bowl over the hot water, making sure it does not touch the water.
  3. 3. Break the chocolate into small pieces and put them into the bowl.
  4. 4. Let the chocolate melt slowly, stirring it occasionally.
  5. 5. Add the palm fat to the melted chocolate and stir until it is completely melted.
  6. 6. Add the espresso and the cognac and stir the mixture well.
  7. 7. Add the cream slowly to the chocolate mixture while stirring constantly.
  8. 8. Continue stirring until the sauce is thick and creamy.
  9. 9. Serve the sauce warm or cold with ice cream, pancakes, or fresh fruit.
