  1. 1. Place a bowl with cold water into a larger bowl with hot water (water bath).
  2. 2. Let the chocolate melt slowly in the hot water bath.
  3. 3. Whisk the egg and egg yolk over the hot water bath until frothy.
  4. 4. Stir the melted chocolate into the egg mixture.
  5. 5. Continue whisking until the mixture is very airy and frothy.
  6. 6. Place the bowl into the cold water bath.
  7. 7. Whisk the mixture further until it has cooled down completely.
  8. 8. Stir the crème double (cream with high fat content) until smooth.
  9. 9. Pour the liquid cream into the crème double and mix it.
  10. 10. Gently fold the cream mixture into the chocolate mixture.
  11. 11. Line a tart pan with a volume of approx. 600 ml with plastic wrap.
  12. 12. Fill the chocolate mixture into the prepared pan.
  13. 13. Place the pan in the freezer for 6 hours.
  14. 14. Slice the parfait for serving.
  15. 15. Serve the slices with sugared mixed berries.
  16. 16. Garnish the dish with fresh mint.
