🍰 Chocolate Mousse with Pears

Ingredients
- 150 g Bittersweet chocolate
- 150 g Milk chocolate
- 20 ml Orange liqueur
- 5 Eggs
- 3 tbsp Vanilla sugar
- 125 g chilled whipping cream
- 50 g Sugar
- 4 ripe Pears
- Juice of one Lemon
- 4 tbsp Sugar
- 500 ml sweet white wine
- 50 g dark chocolate coating
Instructions
- 1. Roughly chop the chocolate and melt it together with the orange liqueur in a double boiler. Remove the bowl from the heat.
- 2. Separate the eggs. Beat the egg yolks with the vanilla sugar until frothy and the sugar has completely dissolved.
- 3. Beat the well-chilled cream until stiff.
- 4. Beat the egg whites with the sugar to form stiff peaks.
- 5. Stir the egg yolk mixture into the chocolate. Quickly fold in the whipped cream before the mixture sets.
- 6. Gently fold the egg white foam into the mixture.
- 7. Seal the bowl tightly with plastic wrap and refrigerate for at least 3 hours.
- 8. Wash the pears, peel them, and drizzle with lemon juice.
- 9. Dissolve the sugar in a little water and simmer for 5 minutes over low heat. Add the wine and pears and stew them covered for about 15 minutes until soft.
- 10. Remove the pears from the liquid and cut them into wedges.
- 11. Reduce the wine liquid to a syrup consistency and drizzle it over the pears before serving.
- 12. Melt the finely chopped chocolate in a double boiler. Fill the melted chocolate into a piping bag with a small round tip and pipe designs onto baking paper as desired. Let the chocolate dry.
- 13. Scoop quenelles of mousse with a spoon and arrange them decoratively on dessert plates with the pear wedges and chocolate strands.
