  1. 1. Roughly chop the chocolate and melt it together with the orange liqueur in a double boiler. Remove the bowl from the heat.
  2. 2. Separate the eggs. Beat the egg yolks with the vanilla sugar until frothy and the sugar has completely dissolved.
  3. 3. Beat the well-chilled cream until stiff.
  4. 4. Beat the egg whites with the sugar to form stiff peaks.
  5. 5. Stir the egg yolk mixture into the chocolate. Quickly fold in the whipped cream before the mixture sets.
  6. 6. Gently fold the egg white foam into the mixture.
  7. 7. Seal the bowl tightly with plastic wrap and refrigerate for at least 3 hours.
  8. 8. Wash the pears, peel them, and drizzle with lemon juice.
  9. 9. Dissolve the sugar in a little water and simmer for 5 minutes over low heat. Add the wine and pears and stew them covered for about 15 minutes until soft.
  10. 10. Remove the pears from the liquid and cut them into wedges.
  11. 11. Reduce the wine liquid to a syrup consistency and drizzle it over the pears before serving.
  12. 12. Melt the finely chopped chocolate in a double boiler. Fill the melted chocolate into a piping bag with a small round tip and pipe designs onto baking paper as desired. Let the chocolate dry.
  13. 13. Scoop quenelles of mousse with a spoon and arrange them decoratively on dessert plates with the pear wedges and chocolate strands.
