🍰 Classic Chocolate Mousse with Fruit

Ingredients
- 150 g dark chocolate (cocoa content 65%)
- 150 g milk chocolate (cocoa content 35%)
- 1 small cup strong espresso
- 20 ml cognac
- 5 eggs
- 3 tbsp vanilla sugar
- 50 g sugar
- 125 g chilled whipping cream (min. 30% fat content)
- 1 orange
- 2 kiwis (and fruit sauce to taste)
Instructions
- 1. Grate the chocolate finely. Set up a bowl over a pot of simmering water (bain-marie). Prepare all remaining ingredients.
- 2. Add the grated chocolate, cognac, and espresso to the bowl over the water. Stir until melted and smooth. Remove the bowl from the heat.
- 3. Separate the eggs. Set the egg yolks aside.
- 4. Whisk the egg yolks with the vanilla sugar in a separate bowl until frothy and the sugar has dissolved.
- 5. Whip the well-chilled cream until stiff. Set it aside.
- 6. Whisk the egg whites into stiff peaks. Slowly pour in the remaining sugar while continuing to whisk.
- 7. Add the egg yolk mixture to the melted chocolate. Gently fold it in with a whisk.
- 8. Add the whipped cream to the chocolate mixture. Quickly fold it in with a whisk before the mixture sets.
- 9. Gently fold the egg whites into the mixture until evenly combined.
- 10. Seal the bowl tightly with plastic wrap. Refrigerate for at least 3 hours.
- 11. Peel the orange with a sharp knife. Remove the segments. Peel the kiwis and slice them into thin wedges.
- 12. Scoop mounds of mousse onto dessert plates. Decorate with the fruit and fruit sauce. Serve the dish.
