🍰 Premium Chocolate Marzipan Squares

Ingredients
- 250 g Marzipan base
- 30 ml Rum
- 50 g powdered sugar
- 400 g dark chocolate (at least 60 % cocoa)
- 150 ml whipping cream
- 200 g dark chocolate coating
- 200 g milk chocolate coating
- powdered sugar (for rolling)
Instructions
- 1. Set the baking frame to the smallest size (approx. 20x24 cm).
- 2. Knead the marzipan base with the powdered sugar and 1 cl of rum until smooth.
- 3. Lightly dust your work surface with powdered sugar.
- 4. Roll out the marzipan dough into a rectangle.
- 5. Place the dough into the prepared baking frame.
- 6. Chop the chocolate into small pieces.
- 7. Bring the cream to a boil in a pot.
- 8. Remove the pot from the heat.
- 9. Add the chopped chocolate to the hot cream.
- 10. Stir until the chocolate has completely melted.
- 11. Stir the remaining rum into the chocolate mixture.
- 12. Pour the chocolate mixture evenly over the marzipan base.
- 13. Smooth the surface with a spoon or spatula.
- 14. Place the mold in the refrigerator.
- 15. Let the confectionery plate set for at least 4 hours, preferably overnight.
- 16. Carefully remove the firm plate from the baking frame.
- 17. Straighten the edges of the plate with a sharp knife.
- 18. Cut the plate into approx. 50 equal squares or rectangles.
- 19. Wipe the knife clean and dry after each cut.
- 20. Chop the couverture chocolate into small pieces.
- 21. Melt the couverture chocolate in a double boiler.
- 22. Temper the melted couverture (cool, warm, cool).
- 23. Dip each square briefly into the liquid couverture.
- 24. Let the excess chocolate drip off for a moment.
- 25. Place the coated squares on a chocolate cooling rack.
- 26. Let the chocolate dry and harden in the air.
