  1. 1. Soak the gelatin in cold water.
  2. 2. Finely chop the chocolate.
  3. 3. Bring the milk, honey, and almonds to a boil in a pot.
  4. 4. Pour the hot milk mixture over the chopped chocolate while stirring.
  5. 5. Let the chocolate melt in the mixture.
  6. 6. Squeeze out the soaked gelatin and stir it into the chocolate cream.
  7. 7. Place the bowl with the cream over a bath of cold water.
  8. 8. Stir the cream constantly until it begins to set.
  9. 9. Whip the cream until stiff.
  10. 10. Gently fold the whipped cream into the chocolate cream.
  11. 11. Rinse the molds with cold water and fill them with the cream.
  12. 12. Place the molds in the refrigerator for at least 3 hours.
  13. 13. Peel the oranges before serving.
  14. 14. Cut out the orange segments.
  15. 15. Unmold the chilled flammeri.
  16. 16. Garnish the flammeri with the orange segments and serve.
