  1. 1. Roughly chop the chocolate.
  2. 2. Melt the chocolate pieces gently in a double boiler.
  3. 3. Remove the bowl from the heat once the chocolate is melted.
  4. 4. Separate the eggs into yolks and whites.
  5. 5. Beat the egg yolks with the vanilla sugar and rum until creamy.
  6. 6. Continue this mixture over the warm water bath.
  7. 7. Remove the bowl from the heat when the mixture is creamy.
  8. 8. Stir the melted chocolate into the egg yolk mixture.
  9. 9. Let the chocolate mixture cool down.
  10. 10. Whip the cream until stiff.
  11. 11. Whip the egg whites until stiff.
  12. 12. Gently fold the whipped cream into the chocolate mixture.
  13. 13. Finally, gently fold in the egg whites.
  14. 14. Fill the mousse into glasses.
  15. 15. Place the glasses in the refrigerator for at least two hours.
  16. 16. Garnish the mousse with raspberries before serving.
