🍰 Airy Chocolate Mousse

Ingredients
- 300 g dark chocolate
- 20 ml rum
- 5 eggs
- 3 tbsp vanilla sugar
- 125 g whipping cream
- 50 g sugar
- raspberries (for garnish)
Instructions
- 1. Roughly chop the chocolate.
- 2. Melt the chocolate pieces gently in a double boiler.
- 3. Remove the bowl from the heat once the chocolate is melted.
- 4. Separate the eggs into yolks and whites.
- 5. Beat the egg yolks with the vanilla sugar and rum until creamy.
- 6. Continue this mixture over the warm water bath.
- 7. Remove the bowl from the heat when the mixture is creamy.
- 8. Stir the melted chocolate into the egg yolk mixture.
- 9. Let the chocolate mixture cool down.
- 10. Whip the cream until stiff.
- 11. Whip the egg whites until stiff.
- 12. Gently fold the whipped cream into the chocolate mixture.
- 13. Finally, gently fold in the egg whites.
- 14. Fill the mousse into glasses.
- 15. Place the glasses in the refrigerator for at least two hours.
- 16. Garnish the mousse with raspberries before serving.
