🍰 Chocolate Cups with Mousse

Ingredients
- 300 g white chocolate
- 75 ml heavy cream (at least 30% fat content)
- 150 g dark chocolate
- 20 ml whisky
- 3 eggs
- 30 g sugar
- 1 pinch salt
- 150 ml heavy cream (at least 30% fat content)
- chocolate shavings (for sprinkling)
Instructions
- 1. Roughly chop the white chocolate.
- 2. Place the chocolate pieces and the cream in a pot.
- 3. Melt the mixture while stirring.
- 4. Get the small chocolate cup molds ready.
- 5. Make sure the mold is open at the bottom.
- 6. Pour the liquid chocolate into the mold.
- 7. Tilt and rotate the mold slightly.
- 8. Distribute the chocolate evenly along the sides.
- 9. Let the excess chocolate drain out through the bottom opening.
- 10. Place the mold on a wire rack.
- 11. Let the chocolate shells dry completely.
- 12. Carefully release the finished chocolate cup from the mold.
- 13. Finely chop the chocolate for the mousse.
- 14. Place the chocolate and the whiskey in a heatproof bowl.
- 15. Place the bowl over a pot of hot water.
- 16. Make sure the water does not boil.
- 17. Melt the chocolate in the hot water bath.
- 18. Let the melted chocolate cool down.
- 19. Separate the eggs into yolks and whites.
- 20. Add a pinch of salt to the eggs.
- 21. Whip the egg whites until stiff.
- 22. Get a second heatproof bowl.
- 23. Place the egg yolks and the sugar in this bowl.
- 24. Place the bowl over the hot water bath.
- 25. Whisk the egg yolk and sugar mixture until very frothy.
- 26. Add the cooled chocolate to the egg yolk mixture.
- 27. Stir in the chocolate.
- 28. Gently fold the egg whites into the mixture.
- 29. Whip the cream until stiff.
- 30. Fold the cream into the chocolate cream.
- 31. Fill the cream into the four chocolate cups.
- 32. Place the cups in the refrigerator.
- 33. Let the cream set for about three to four hours.
- 34. Sprinkle the finished cream with chocolate shavings.
- 35. Serve the chocolate cups.
