  1. 1. Mix flour, sugar, cocoa powder, salt, eggs, egg yolk, and butter in a bowl.
  2. 2. Gradually stir in milk and water with a whisk.
  3. 3. Let the batter rest for half an hour.
  4. 4. Wash, peel, and core the pears.
  5. 5. Cut the pears into small cubes.
  6. 6. Heat butter with lemon juice in a pan.
  7. 7. Add the pear cubes and raisins.
  8. 8. Simmer the mixture over low heat for about 10 minutes.
  9. 9. Add the pear spirit and sweeten to taste with sugar.
  10. 10. Toast the sliced almonds in a dry pan.
  11. 11. Set the toasted almonds aside.
  12. 12. Split the vanilla pod lengthwise and scrape out the seeds.
  13. 13. Add the vanilla seeds and powdered sugar to the cream.
  14. 14. Whip the cream until stiff.
  15. 15. Heat clarified butter in a small pan.
  16. 16. Cook four thin pancakes (crepes) one after the other.
  17. 17. Spread half a tablespoon of apricot jam on each crepe.
  18. 18. Place the pear filling, almonds, and vanilla cream on one half of the crepe.
  19. 19. Fold the other half of the crepe over.
  20. 20. Sprinkle the finished crepes with chocolate shavings.
