🍰 Airy Chocolate Yogurt Mousse with Orange Salad

Ingredients
- 3 sheets gelatin
- 75 g white chocolate
- 300 g yogurt (0.3 % fat)
- 3 egg whites
- 50 g cane sugar
- 3 oranges
- 1 pomegranate
- 40 ml orange liqueur (or orange syrup)
- lemon balm (to taste)
Instructions
- 1. Place the gelatin in a bowl of cold water and let it bloom.
- 2. Chop the chocolate couverture into small pieces.
- 3. Melt the chocolate pieces over a hot water bath or in the microwave.
- 4. Separate the eggs by dividing the yolks from the whites.
- 5. Place the egg whites in a tall container.
- 6. Whisk the egg whites with the sugar until stiff peaks form.
- 7. Use the egg yolks for another dish.
- 8. Squeeze the excess water from the bloomed gelatin and melt it gently in a saucepan.
- 9. Take three tablespoons of the yogurt mixture and stir it into the melted gelatin.
- 10. Stir the gelatin-yogurt mixture into the remaining yogurt mixture in the bowl.
- 11. Slowly add the liquid chocolate to the yogurt.
- 12. Stir everything thoroughly with a whisk while stirring constantly.
- 13. Gently fold the egg whites into the yogurt-chocolate mixture.
- 14. Rinse four small molds (each 150 milliliters) with cold water.
- 15. Fill the yogurt mixture into the molds.
- 16. Place the molds in the refrigerator for two to three hours.
- 17. Rinse the oranges under hot water and dry them.
- 18. Peel the oranges thickly, ensuring the white pith is also removed.
- 19. Slice the orange flesh into rounds.
- 20. Cut the pomegranate in half.
- 21. Remove the seeds from the shell using a spoon.
- 22. Mix the pomegranate seeds in a bowl with the orange slices.
- 23. Add orange liqueur or orange syrup and mix everything together.
- 24. Distribute the orange salad onto the plates.
- 25. Dip the molds briefly into hot water.
- 26. Run the tip of a sharp knife along the edge of the molds.
- 27. Carefully turn out the mousse onto the orange salad.
- 28. Garnish the mousse with lemon balm as desired.
- 29. Serve the dessert immediately.
