🍰 Moist Chocolate Pear Cake

Ingredients
- 1 Lemon (organic)
- 0.5 Cinnamon stick
- 2 tbsp Sugar
- 5 small Pears
- Margarine (for the pan)
- Flour (for the pan)
- 100 g Dark chocolate (vegan)
- 1 tbsp Orange juice
- 200 g Sugar
- 100 g fine brown sugar
- 1 tbsp Vanilla sugar
- 200 g Flour
- 50 g Cornstarch
- 60 g Cocoa powder
- 3 tsp Baking powder
- 150 ml Rapeseed oil
- 200 ml Rice drink (rice milk)
- Powdered sugar (for dusting)
Instructions
- 1. Pour about 400 milliliters of water into a pot.
- 2. Add the grated lemon zest, squeezed lemon juice, a cinnamon stick, and sugar to the water.
- 3. Bring the liquid to a boil.
- 4. Peel the pears.
- 5. Cut the pears in half.
- 6. Core the pears.
- 7. Place the pears into the boiling syrup.
- 8. Cook the pears until tender for about 5 minutes.
- 9. Remove the fruit from the syrup.
- 10. Let the pears drain.
- 11. Let the pears cool down completely.
- 12. Preheat the oven to 170 degrees Celsius with top and bottom heat.
- 13. Grease the cake pan with margarine.
- 14. Dust the pan with flour.
- 15. Grate the chocolate finely.
- 16. Put the sugar, brown sugar, vanilla sugar, flour, starch, cocoa, and baking powder into a bowl.
- 17. Mix the dry ingredients well.
- 18. Whisk the oil with the rice drink.
- 19. Add the liquid mixture to the dry ingredients.
- 20. Stir everything well.
- 21. Stir in enough water until the batter is smooth.
- 22. Use up to about 80 milliliters of water.
- 23. Make sure the batter does not become too runny.
- 24. Fold in the grated chocolate.
- 25. Pour the batter into the prepared pan.
- 26. Smooth the batter.
- 27. Place the cooled pears on the batter.
- 28. Press the pears slightly into the batter.
- 29. Bake the cake in the oven for about 40 minutes.
- 30. Cover the cake with aluminum foil in the second half of the baking time if it gets too dark.
- 31. Remove the cake from the oven.
- 32. Let the cake cool down.
- 33. Cut the cake into pieces.
- 34. Dust the pieces with powdered sugar.
- 35. Serve the cake.
