  2. 2. Scrape out the tiny seeds with the back of a knife.
  3. 3. Put the milk, the pod, and the seeds in a pot.
  4. 4. Bring the milk to a boil.
  5. 5. Chop the chocolate.
  6. 6. Place a bowl over a pot of hot water.
  7. 7. Melt the chopped chocolate in the bowl.
  8. 8. Heat the butter in a pot.
  9. 9. Stir the flour into the butter.
  10. 10. Let the mixture cook briefly.
  11. 11. Remove the vanilla pod from the milk.
  12. 12. Slowly stir the hot milk into the butter-flour mixture.
  13. 13. Let the mixture simmer gently for 10 minutes.
  14. 14. Stir the mixture occasionally while cooking.
  15. 15. Pour the warm mixture into a large mixing bowl.
  16. 16. Let the mixture cool down briefly.
  17. 17. Separate the eggs and take two egg whites without the yolk.
  18. 18. Stir in the two egg whites.
  19. 19. Add the egg yolks one by one.
  20. 20. Stir the mixture until smooth.
  21. 21. Add the melted chocolate.
  22. 22. Add the nuts.
  23. 23. Whip the remaining egg whites with the sugar until stiff.
  24. 24. Form firm peaks with the egg whites.
  25. 25. Take about one quarter of the stiff egg whites.
  26. 26. Gently stir this part into the mixture.
  27. 27. Fold the rest of the egg whites in gently with a spoon or spatula.
  28. 28. Keep the mixture airy.
  29. 29. Grease the molds with butter.
  30. 30. Dust the molds with sugar.
  31. 31. Fill the molds with the batter using a piping bag with a large tip.
  32. 32. Fill the molds to three-quarters full.
  33. 33. Place the molds in a hot water bath.
  34. 34. Preheat the oven to 180 degrees Celsius conventional heat.
  35. 35. Bake the muffins for 25 to 30 minutes.
  36. 36. Turn out the finished muffins from the molds to serve.
  37. 37. Dust them lightly with powdered sugar.
