  3. 3. Whisk the egg whites in a separate bowl until stiff.
  4. 4. Stir the sugar slowly into the egg whites.
  5. 5. Continue whisking until the mixture is firm and glossy.
  6. 6. Gently fold the flour mixture into the egg whites.
  7. 7. Transfer the mixture to a piping bag fitted with a large round tip.
  8. 8. Pipe small mounds about 2.5 centimeters in diameter onto a baking sheet lined with parchment paper.
  9. 9. Bake the cookies in the preheated oven for about 40 minutes.
  10. 10. Keep the oven door slightly ajar during baking.
  11. 11. Remove the tray from the oven and let the cookies cool on it.
  12. 12. Chop the chocolate coating into small pieces.
  13. 13. Melt the chocolate carefully over a hot water bath.
  14. 14. Whip the cream until stiff.
  15. 15. Stir the butter in small pieces into the melted chocolate using a whisk.
