🍽️ Crunchy Chocolate Macarons with Cream Filling

Ingredients
- 3 tbsp flour
- 200 g ground almond kernels
- 2 tsp cocoa powder
- 4 egg whites
- 250 g very fine sugar
- 150 g dark chocolate (70% cocoa content)
- 80 g whipping cream
- 20 g butter
- cocoa powder (for dusting)
- 200 g powdered sugar
- 2 tbsp lemon juice
- food coloring (to taste)
- colorful sprinkles
- sugar pearls
Instructions
- 1. Preheat the oven to 130 degrees Celsius.
- 2. Mix flour, ground almonds, and cocoa in a bowl.
- 3. Whisk the egg whites in a separate bowl until stiff.
- 4. Stir the sugar slowly into the egg whites.
- 5. Continue whisking until the mixture is firm and glossy.
- 6. Gently fold the flour mixture into the egg whites.
- 7. Transfer the mixture to a piping bag fitted with a large round tip.
- 8. Pipe small mounds about 2.5 centimeters in diameter onto a baking sheet lined with parchment paper.
- 9. Bake the cookies in the preheated oven for about 40 minutes.
- 10. Keep the oven door slightly ajar during baking.
- 11. Remove the tray from the oven and let the cookies cool on it.
- 12. Chop the chocolate coating into small pieces.
- 13. Melt the chocolate carefully over a hot water bath.
- 14. Whip the cream until stiff.
- 15. Stir the butter in small pieces into the melted chocolate using a whisk.
- 16. Let the chocolate cool slightly.
- 17. Gently fold in the whipped cream into the chocolate mixture.
- 18. Spread the filling onto half of the cooled cookies.
- 19. Sandwich the cookies together with the remaining cookies.
- 20. Allow the filling to set.
- 21. Chop the remaining chocolate into small pieces.
- 22. Melt it over a hot water bath.
- 23. Let the chocolate cool slightly.
- 24. Glaze the cookies with the cooled chocolate.
- 25. Allow the glaze to set.
- 26. Mix powdered sugar and lemon juice to form a thick icing.
- 27. Color the icing with food coloring if desired.
- 28. Pipe fun faces onto the cookies using a piping bag.
- 29. Decorate them as you like with colorful sprinkles, sugar pearls, or other sweets.
