🍰 Chocolate Vanilla Towers on Orange Sauce

Ingredients
- 120 g Sugar
- 25 g Cocoa powder
- 1 Vanilla pod (seeds)
- 4 Eggs
- 50 ml Milk
- 40 ml Oil
- 120 g Flour
- 1 Pinch Salt
- 0.5 l Milk
- 1 Vanilla pod
- 5 Egg yolks
- 100 g Sugar
- 30 g Flour
- 1 Pinch Salt
- 3 Oranges
- 0.125 l White wine
- 80 g Sugar
- 2 tsp Cornstarch
- Chocolate shavings (for decoration)
- 2 Dried apricots (in strips)
- Cocoa powder (for dusting)
Instructions
- 1. Peel the oranges.
- 2. Carefully separate the segments and catch the juice.
- 3. Bring the wine and sugar to a boil.
- 4. Add the segments and juice.
- 5. Poach the orange segments for a few minutes (simmer gently in the hot liquid).
- 6. Blend the mixture until smooth.
- 7. Set the sauce aside.
- 8. Mix the cornstarch with a little water until smooth.
- 9. Stir the cornstarch mixture into the orange sauce.
- 10. Bring the sauce to a brief boil.
- 11. Chill the sauce.
- 12. Warm the milk and oil to 50 degrees.
- 13. Beat eggs, sugar, vanilla seeds, and salt until creamy.
- 14. Fold in flour and cocoa.
- 15. Stir in the warm milk-oil mixture.
- 16. Spread the batter onto a baking sheet lined with parchment paper.
- 17. Preheat the oven.
- 18. Bake at 210 degrees for about 8 minutes.
- 19. Invert the cake onto sugar-dusted paper.
- 20. Remove the parchment paper.
- 21. Cut into 12 equal rectangles.
- 22. Slice the vanilla pod lengthwise.
- 23. Scrape out the seeds.
- 24. Add both the pod and seeds to the milk.
- 25. Bring the milk to a boil.
- 26. Beat the egg yolks with sugar in a bowl until creamy.
- 27. Mix in the flour.
- 28. Stir the hot milk into the egg yolk mixture.
- 29. Return everything to the pot.
- 30. Remove the vanilla pod.
- 31. Bring the cream to a brief boil over low heat while stirring constantly.
- 32. Strain the vanilla cream.
- 33. Let the cream cool.
- 34. Dust the surface lightly with sugar.
- 35. Spread vanilla cream between sets of three cake rectangles.
- 36. Add a dollop of cream on top.
- 37. Decorate with apricot strips and chocolate shavings.
- 38. Spread the orange sauce as a mirror on the plates.
- 39. Place the towers on top.
- 40. Dust with cocoa powder.
