  1. 1. Put the rice pudding into a pot with the cold milk.
  2. 2. Add the lemon zest and the slit vanilla pod.
  3. 3. Bring the mixture to a boil on the stove.
  4. 4. Stir briefly and turn off the heat.
  5. 5. Let the rice swell with the pot covered for about 25 minutes.
  6. 6. Remove the lid and let the rice cool down completely.
  7. 7. Remove the vanilla pod from the cooled mixture.
  8. 8. Separate the eggs by carefully separating the egg whites from the egg yolks.
  9. 9. Beat the egg whites with a pinch of salt and lemon juice until stiff.
  10. 10. Beat the egg yolks with the butter and sugar until creamy.
  11. 11. Stir the cooled rice into the egg yolk mixture.
  12. 12. Gently fold the egg whites into the rice mixture.
  13. 13. Spread half of this mixture onto a baking tray lined with baking paper (approx. 20x30 cm).
  14. 14. Chop the butter and the chocolate coating.
  15. 15. Melt both in a double boiler while stirring constantly.
  16. 16. Separate eggs again to separate the egg whites from the egg yolks.
  17. 17. Beat the new egg whites very stiff.
  18. 18. Add lemon juice to the stiff egg whites.
  19. 19. Beat the new egg yolks with the sugar, lemon zest and vanilla paste until creamy.
  20. 20. Slowly stir the melted chocolate mixture into the egg yolk mixture.
  21. 21. Add the stiff egg whites to the chocolate-egg mixture.
  22. 22. Sift the cornstarch over the mixture.
  23. 23. Fold everything in gently until a homogeneous mixture is formed.
  24. 24. Spread this chocolate mixture evenly over the rice base.
  25. 25. Smooth the chocolate layer.
  26. 26. Cover the chocolate layer with the remaining rice mixture.
  27. 27. Smooth the top rice layer as well.
  28. 28. Preheat the oven to 200°C.
  29. 29. Bake the bars in the preheated oven for about 35-40 minutes until golden brown.
  30. 30. Let the bars cool completely.
  31. 31. Cut the cooled bars into strips.
