🍰 Crunchy Chocolate Rice Bars

Ingredients
- 1 l milk
- 200 g rice pudding rice
- 1 piece lemon zest
- 1 vanilla pod
- 4 eggs
- 1 pinch salt
- 2 tbsp lemon juice
- 80 g butter
- 70 g sugar
- 250 g butter
- 250 g dark chocolate coating
- 6 eggs
- 100 g sugar
- 1 lemon (zested)
- 1 tbsp lemon juice
- 1 vanilla pod (seeds)
- 2 tbsp cornstarch
Instructions
- 1. Put the rice pudding into a pot with the cold milk.
- 2. Add the lemon zest and the slit vanilla pod.
- 3. Bring the mixture to a boil on the stove.
- 4. Stir briefly and turn off the heat.
- 5. Let the rice swell with the pot covered for about 25 minutes.
- 6. Remove the lid and let the rice cool down completely.
- 7. Remove the vanilla pod from the cooled mixture.
- 8. Separate the eggs by carefully separating the egg whites from the egg yolks.
- 9. Beat the egg whites with a pinch of salt and lemon juice until stiff.
- 10. Beat the egg yolks with the butter and sugar until creamy.
- 11. Stir the cooled rice into the egg yolk mixture.
- 12. Gently fold the egg whites into the rice mixture.
- 13. Spread half of this mixture onto a baking tray lined with baking paper (approx. 20x30 cm).
- 14. Chop the butter and the chocolate coating.
- 15. Melt both in a double boiler while stirring constantly.
- 16. Separate eggs again to separate the egg whites from the egg yolks.
- 17. Beat the new egg whites very stiff.
- 18. Add lemon juice to the stiff egg whites.
- 19. Beat the new egg yolks with the sugar, lemon zest and vanilla paste until creamy.
- 20. Slowly stir the melted chocolate mixture into the egg yolk mixture.
- 21. Add the stiff egg whites to the chocolate-egg mixture.
- 22. Sift the cornstarch over the mixture.
- 23. Fold everything in gently until a homogeneous mixture is formed.
- 24. Spread this chocolate mixture evenly over the rice base.
- 25. Smooth the chocolate layer.
- 26. Cover the chocolate layer with the remaining rice mixture.
- 27. Smooth the top rice layer as well.
- 28. Preheat the oven to 200°C.
- 29. Bake the bars in the preheated oven for about 35-40 minutes until golden brown.
- 30. Let the bars cool completely.
- 31. Cut the cooled bars into strips.
