🍰 Chocolate Muffins with Oats

Ingredients
- 40 ml Rapeseed oil (4 tbsp)
- 2 Eggs
- 60 ml Milk (1.5% fat)
- 100 g liquid Honey
- 110 g Wheat flour Type 1050
- 2 tsp Baking powder
- 50 g Oats
- 10 g Cocoa powder (1 tbsp)
- 2 Navel oranges (per serving)
Instructions
- 1. Put oil, eggs, milk, and honey into a large mixing bowl.
- 2. Whisk the ingredients with the beaters of a hand mixer until well combined.
- 3. Take a second bowl and mix flour, baking powder, oats, and cocoa powder in it.
- 4. Add the dry ingredients to the egg mixture.
- 5. Stir everything quickly until the ingredients are combined.
- 6. Place 6 paper liners into the compartments of a 6-cup muffin tin.
- 7. Fill the batter into the liners.
- 8. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2–3).
- 9. Bake the muffins on the middle rack for about 15 minutes.
- 10. Remove the muffins from the oven.
- 11. Let them cool on a wire rack.
- 12. Halve the oranges and squeeze out the juice.
- 13. Serve 1 muffin per portion along with the juice of 2 oranges.
- 14. Put the remaining muffins into an airtight container.
- 15. Store the container in the refrigerator, where the muffins will stay fresh for about 1 week.
- 16. Serve the stored muffins gradually along with orange juice.
