  1. 1. Break the chocolate tablets into small pieces.
  2. 2. Place the chocolate pieces and the brandy in a heatproof bowl.
  3. 3. Place the bowl over a pot with simmering water.
  4. 4. Melt the chocolate over low heat until it is liquid.
  5. 5. Remove the bowl from the pot and let the mixture cool down briefly.
  6. 6. Whip the cream and the double cream in a separate bowl until stiff.
  7. 7. Gently fold the whipped cream into the cooled chocolate mixture.
  8. 8. Fill the mousse into small bowls.
  9. 9. Place the bowls in the refrigerator for one hour.
  10. 10. Break some chocolate tablets into small pieces before serving.
  11. 11. Decorate the mousse with the chocolate pieces.
