🍽️ Crunchy Chocolate Almond Cookies

Ingredients
- 100 g dark chocolate
- 200 g coconut blossom sugar
- 1 pinch cinnamon
- 1 pinch ground clove
- 250 g ground almond kernels
- 2 tsp cocoa powder
- 2 egg whites
- 1 pinch salt
- 1 tbsp orange juice
Instructions
- 1. Melt the chocolate in a hot water bath.
- 2. Mix coconut blossom sugar, spices, almonds, and cocoa in a bowl.
- 3. Whip the egg whites with a pinch of salt until stiff.
- 4. Gently fold the whipped egg whites into the almond-cocoa mixture in portions.
- 5. Add the melted chocolate and orange juice.
- 6. Knead everything into a firm dough.
- 7. Shape the dough into a ball.
- 8. Wrap it in cling film.
- 9. Let it rest in the refrigerator for about 1 hour.
- 10. Roll out the dough on a lightly floured surface to a thickness of 1 cm.
- 11. Cut out Christmas tree shapes from the dough.
- 12. Place the cookies on baking sheets lined with baking paper.
- 13. Bake them in the preheated oven at 200 °C (convection: 180 °C; gas: setting 3) for about 7 to 10 minutes.
