  2. 2. Mix coconut blossom sugar, spices, almonds, and cocoa in a bowl.
  3. 3. Whip the egg whites with a pinch of salt until stiff.
  4. 4. Gently fold the whipped egg whites into the almond-cocoa mixture in portions.
  5. 5. Add the melted chocolate and orange juice.
  6. 6. Knead everything into a firm dough.
  7. 7. Shape the dough into a ball.
  8. 8. Wrap it in cling film.
  9. 9. Let it rest in the refrigerator for about 1 hour.
  10. 10. Roll out the dough on a lightly floured surface to a thickness of 1 cm.
  11. 11. Cut out Christmas tree shapes from the dough.
  12. 12. Place the cookies on baking sheets lined with baking paper.
  13. 13. Bake them in the preheated oven at 200 °C (convection: 180 °C; gas: setting 3) for about 7 to 10 minutes.
