  1. 1. Preheat a non-stick frying pan over medium heat.
  2. 2. Add the almonds to the hot pan.
  3. 3. Roast the almonds without extra fat until they turn slightly brown.
  4. 4. Sprinkle the sugar evenly over the warm almonds.
  5. 5. Stir continuously until the sugar melts and forms a caramelized coating.
  6. 6. Place a sheet of baking paper on a flat surface.
  7. 7. Remove the almonds from the pan and place them on the baking paper.
  8. 8. Separate the almonds from each other immediately so they do not stick together.
  9. 9. Let the almonds cool down completely.
  10. 10. Break the chocolate into small pieces.
  11. 11. Prepare a double boiler (a bowl placed over a pot with hot, but not boiling water).
  12. 12. Melt the chocolate pieces in the double boiler while stirring constantly.
  13. 13. Pour the melted chocolate over the cooled almonds.
  14. 14. Set up a fine wire rack or sieve.
  15. 15. Let the coated almonds drip on the rack to remove excess chocolate.
  16. 16. Mix the desired spices with the cocoa powder in a small bowl.
  17. 17. Roll the still moist chocolate almonds in the spice-cocoa mixture.
  18. 18. Let the finished rolled almonds dry.
