🍽️ Crunchy Chocolate Almonds

Ingredients
- 500 g almond kernels
- 3 tbsp sugar
- 250 g dark chocolate
- 1 tsp cinnamon powder
- 1 tsp cardamom (ground)
- 1 tsp anise powder
- 3 tbsp cocoa powder
Instructions
- 1. Preheat a non-stick frying pan over medium heat.
- 2. Add the almonds to the hot pan.
- 3. Roast the almonds without extra fat until they turn slightly brown.
- 4. Sprinkle the sugar evenly over the warm almonds.
- 5. Stir continuously until the sugar melts and forms a caramelized coating.
- 6. Place a sheet of baking paper on a flat surface.
- 7. Remove the almonds from the pan and place them on the baking paper.
- 8. Separate the almonds from each other immediately so they do not stick together.
- 9. Let the almonds cool down completely.
- 10. Break the chocolate into small pieces.
- 11. Prepare a double boiler (a bowl placed over a pot with hot, but not boiling water).
- 12. Melt the chocolate pieces in the double boiler while stirring constantly.
- 13. Pour the melted chocolate over the cooled almonds.
- 14. Set up a fine wire rack or sieve.
- 15. Let the coated almonds drip on the rack to remove excess chocolate.
- 16. Mix the desired spices with the cocoa powder in a small bowl.
- 17. Roll the still moist chocolate almonds in the spice-cocoa mixture.
- 18. Let the finished rolled almonds dry.
