🍰 Chocolate Lebkuchen Cookies

Ingredients
- 100 g candied lemon peel and candied orange peel candied orange peel (finely chopped)
- 150 g sugar
- 5 eggs
- 150 g honey
- 3 tsp gingerbread spice
- juice and zest of one lemon
- 500 g ground hazelnuts
- 30 round baking wafers (7 cm ?)
- 150 g dark chocolate coating
Instructions
- 1. Beat the eggs together with the honey and sugar in a bowl using a mixer or whisk until the mixture is light and frothy.
- 2. Gently fold in the gingerbread spice, the grated lemon zest, the lemon juice, the almonds, the citron, and the candied orange peel into the egg mixture.
- 3. Knead the ingredients together by hand to form a smooth dough.
- 4. Place wafer cookies (thin, round waffles) on two baking sheets lined with baking paper.
- 5. Distribute the dough evenly over the wafer cookies.
- 6. Let the topped wafers dry in the air for about 1 hour.
- 7. Preheat your oven to 150 degrees Celsius.
- 8. Bake the lebkuchen for approx. 25 minutes in the preheated oven.
- 9. Remove the trays and let the lebkuchen cool down completely.
- 10. Melt the chocolate coating slowly in a double boiler.
- 11. Coat the cooled lebkuchen with the melted chocolate.
- 12. Let the chocolate dry in the air until it is firm.
