🍰 Spiced Chocolate Muffins with Jam Filling

Ingredients
- 150 g honey
- 100 g brown sugar
- 70 g butter
- 3 tbsp milk (3.5% fat)
- 2 eggs
- 250 g flour
- 0.5 packet baking powder
- 1 pinch cardamom
- 0.5 tsp clove powder
- 1.5 tsp cinnamon
- 1 tsp gingerbread spice
- 100 g chopped almonds
- 2 tbsp cocoa powder
- 250 g pineapple jam
- 1 tbsp powdered sugar
- 50 g candied pineapple
Instructions
- 1. Warm honey, sugar, butter, and milk in a pot until the sugar is completely dissolved.
- 2. Let the honey-sugar mixture cool down until it is lukewarm.
- 3. Mix flour and baking powder and sift the mixture into a large bowl.
- 4. Add the spices and cocoa to the flour mixture and stir everything well.
- 5. Pour the cooled honey mixture into the bowl with the flour mixture and stir it in.
- 6. Stir the eggs into the batter until they are fully incorporated.
- 7. Gently fold the almonds into the finished batter.
- 8. Line a muffin tray with paper liners.
- 9. Fill the batter into a piping bag with a round nozzle.
- 10. Pipe a thin layer of batter onto the bottom and sides of the liners.
- 11. Add one teaspoon of jam to the center of each liner.
- 12. Pipe more batter over the jam until the liners are two-thirds full.
- 13. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
- 14. Bake the muffins on the middle rack for 20 to 25 minutes.
- 15. Remove the muffins from the oven and let them cool for a short while.
- 16. Carefully release the muffins from the tray.
- 17. Decorate the muffins with stars made of candied pineapple before serving.
- 18. Finally, dust the muffins with powdered sugar.
