🍰 Chocolate Cream Cheese Popsicles

Ingredients
- 100 g dark chocolate (min. 70% cocoa content)
- 6 chocolate whole wheat cookies (60 g)
- 200 g cream cheese (45% fat in dry matter)
- 300 g skyr
- 50 g honey
- 0.5 organic lemon (zest)
- 2 tbsp strongly deoiled cocoa powder (14 g)
- 100 g whipping cream
- 100 g white chocolate
Instructions
- 1. Chop the dark chocolate into small pieces.
- 2. Melt the chocolate pieces over a bowl of hot water (bain-marie).
- 3. Drizzle the melted chocolate in thin lines into the popsicle molds.
- 4. Crush the cookies into fine crumbs.
- 5. Set aside some of the cookie crumbs for later decoration.
- 6. Stir the cream cheese until smooth with the skyr, honey, lemon zest, and cocoa powder.
- 7. Whip the cream until stiff.
- 8. Gently fold the whipped cream into the cream cheese mixture.
- 9. Fold the remaining cookie crumbs into the cream cheese and cream mixture.
- 10. Fill the mixture into the prepared popsicle molds.
- 11. Place the molds in the freezer for at least 4 hours.
- 12. Insert the wooden sticks into the half-frozen mixture after 1 to 2 hours.
- 13. Chop the white chocolate into small pieces.
- 14. Melt the white chocolate pieces over a bowl of hot water (bain-marie).
- 15. Carefully remove the finished popsicles from the molds.
- 16. Decorate the popsicles with the melted white chocolate and the reserved cookie crumbs.
