  1. 1. Chop the dark chocolate into small pieces.
  2. 2. Melt the chocolate pieces over a bowl of hot water (bain-marie).
  3. 3. Drizzle the melted chocolate in thin lines into the popsicle molds.
  4. 4. Crush the cookies into fine crumbs.
  5. 5. Set aside some of the cookie crumbs for later decoration.
  6. 6. Stir the cream cheese until smooth with the skyr, honey, lemon zest, and cocoa powder.
  7. 7. Whip the cream until stiff.
  8. 8. Gently fold the whipped cream into the cream cheese mixture.
  9. 9. Fold the remaining cookie crumbs into the cream cheese and cream mixture.
  10. 10. Fill the mixture into the prepared popsicle molds.
  11. 11. Place the molds in the freezer for at least 4 hours.
  12. 12. Insert the wooden sticks into the half-frozen mixture after 1 to 2 hours.
  13. 13. Chop the white chocolate into small pieces.
  14. 14. Melt the white chocolate pieces over a bowl of hot water (bain-marie).
  15. 15. Carefully remove the finished popsicles from the molds.
  16. 16. Decorate the popsicles with the melted white chocolate and the reserved cookie crumbs.
