🍰 Chocolate-Strawberry Crepes

Ingredients
- 275 ml Milk
- 125 g Flour
- 2 Eggs
- 1 tbsp liquid Butter
- 1 tsp Sugar
- 1 pinch Salt
- Vegetable oil (for frying)
- 200 g Dark chocolate
- 20 ml Strawberry liqueur
- 3 tbsp Whipping cream
- 400 g Strawberries
- 1 tbsp Lemon juice
- 1 tbsp Powdered sugar
Instructions
- 1. Whisk the milk and flour in a bowl until smooth and lump-free.
- 2. Add the eggs and mix well until the batter is homogeneous.
- 3. Stir in the melted butter, sugar, and salt.
- 4. Let the batter rest for 10 to 15 minutes to allow it to swell.
- 5. Chop the chocolate roughly.
- 6. Melt the chocolate with the liqueur and cream over a hot water bath.
- 7. Remove the bowl from the heat once the chocolate has melted.
- 8. Wash the strawberries thoroughly.
- 9. Remove the green stems and leaves (hull the strawberries).
- 10. Cut the strawberries into bite-sized pieces.
- 11. Add the lemon juice and powdered sugar to the strawberries.
- 12. Let the strawberry mixture sit briefly to allow the flavors to meld.
- 13. Heat a crepe pan or a non-stick pan.
- 14. Brush the hot pan with a little oil.
- 15. Pour a small amount of batter into the pan.
- 16. Swirl the pan to spread the batter evenly and thinly across the bottom.
- 17. Cook the crepe over medium heat for 1 to 2 minutes until golden brown.
- 18. Flip the crepe and cook for another approx. 1 minute on the other side.
- 19. Repeat the process with the remaining batter until all 8 crepes are baked.
- 20. Place a spoonful of chocolate sauce in the center of each finished crepe.
- 21. Fold the crepe.
- 22. Garnish the crepe with the prepared strawberries.
- 23. Serve the crepes immediately.
