  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Roughly chop the white chocolate.
  3. 3. Heat the butter in a saucepan.
  4. 4. Add the chopped chocolate to the hot butter and stir until completely melted.
  5. 5. Remove the saucepan from the heat.
  6. 6. Whisk the milk, egg, sour cream, and sugar with a hand mixer until the mixture is creamy.
  7. 7. Mix the flour, cornstarch, baking powder, and salt in a separate bowl.
  8. 8. Add the liquid chocolate butter and the milk-egg mixture to the flour mixture.
  9. 9. Stir everything together until you have a smooth batter.
  10. 10. Place paper liners into a cupcake tin.
  11. 11. Fill the batter into the liners.
  12. 12. Bake the cupcakes on the middle rack for about 25 minutes.
  13. 13. Check for doneness with a wooden skewer: it should come out clean.
  14. 14. Remove the cupcakes from the oven and let them cool for a short while.
  15. 15. Finely chop the remaining chocolate for decoration.
  16. 16. Place the chopped chocolate into a bowl.

  18. 18. Pour the hot cream over the chocolate.
  19. 19. Stir gently until the chocolate is melted and forms a smooth mixture.
  20. 20. Add small pieces of butter and stir them in.
  21. 21. Let the mixture cool until it begins to thicken slightly.
  22. 22. Stir the mixture vigorously one more time.
  23. 23. Fill the ganache into a piping bag fitted with a star tip.
  24. 24. Pipe the ganache onto the cooled cupcakes.
  25. 25. Decorate the cupcakes with sugar pearls.
  26. 26. Serve the cupcakes.
