🍰 Moist Chocolate Cupcakes with Ganache Topping

Ingredients
- 100 g white chocolate
- 100 g butter
- 125 ml milk
- 1 egg
- 100 ml sour cream
- 100 g sugar
- 250 g flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 1 pinch salt
- 400 g dark chocolate
- 200 ml whipping cream
- 50 g butter
- sugar pearls (for garnishing)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Roughly chop the white chocolate.
- 3. Heat the butter in a saucepan.
- 4. Add the chopped chocolate to the hot butter and stir until completely melted.
- 5. Remove the saucepan from the heat.
- 6. Whisk the milk, egg, sour cream, and sugar with a hand mixer until the mixture is creamy.
- 7. Mix the flour, cornstarch, baking powder, and salt in a separate bowl.
- 8. Add the liquid chocolate butter and the milk-egg mixture to the flour mixture.
- 9. Stir everything together until you have a smooth batter.
- 10. Place paper liners into a cupcake tin.
- 11. Fill the batter into the liners.
- 12. Bake the cupcakes on the middle rack for about 25 minutes.
- 13. Check for doneness with a wooden skewer: it should come out clean.
- 14. Remove the cupcakes from the oven and let them cool for a short while.
- 15. Finely chop the remaining chocolate for decoration.
- 16. Place the chopped chocolate into a bowl.
- 17. Heat the cream.
- 18. Pour the hot cream over the chocolate.
- 19. Stir gently until the chocolate is melted and forms a smooth mixture.
- 20. Add small pieces of butter and stir them in.
- 21. Let the mixture cool until it begins to thicken slightly.
- 22. Stir the mixture vigorously one more time.
- 23. Fill the ganache into a piping bag fitted with a star tip.
- 24. Pipe the ganache onto the cooled cupcakes.
- 25. Decorate the cupcakes with sugar pearls.
- 26. Serve the cupcakes.
