  1. 1. Mix the flour with the powdered sugar, cinnamon, and cocoa in a bowl.
  2. 2. Add the butter in small pieces and knead it quickly into a dough.
  3. 3. Wrap the dough in cling film.
  4. 4. Store the dough in the refrigerator for about 30 minutes.
  5. 5. Preheat the oven to 160 degrees Celsius fan-forced.
  6. 6. Line a baking tray with baking paper.
  7. 7. Sprinkle some flour on the work surface.
  8. 8. Roll out the dough to about 3 millimeters thick.
  9. 9. Cut out 20 circles with a diameter of 6 cm.
  10. 10. Place the cookies on the prepared baking tray.
  11. 11. Bake the cookies in the preheated oven for about 15 minutes.
  12. 12. Take the cookies out of the oven.
  13. 13. Carefully loosen the cookies from the tray.
  14. 14. Let the cookies cool down completely.
  15. 15. Heat 100 milliliters of cream in a pot.
  16. 16. Finely chop the dark chocolate.
  17. 17. Pour 50 milliliters of the hot cream over the chopped chocolate.
  18. 18. Add the rum.
  19. 19. Stir the mixture until the chocolate is completely melted.
  20. 20. Repeat the process with the milk chocolate and the cocoa liqueur.
  21. 21. Place both chocolate creams in the refrigerator for about 30 minutes.
  22. 22. Whip the remaining cold cream stiff with the powdered sugar.
  23. 23. Fill all three creams into piping bags with a plain nozzle.
  24. 24. Place a dollop of dark chocolate cream on a shortbread cookie.
  25. 25. Place another shortbread cookie on top.
  26. 26. Place a dollop of milk chocolate cream on top.
  27. 27. Place another shortbread cookie on top.
  28. 28. Place a dollop of whipped cream on top.
  29. 29. Place another shortbread cookie on top.
  30. 30. Place a dollop of dark chocolate cream on top.
  31. 31. Place another shortbread cookie on top.
  32. 32. Garnish the pastry with a dollop of cream and some dark chocolate cream.
  33. 33. Repeat the process with the remaining cookies.
  34. 34. Serve the cookies.
