🍰 Chocolate Cream Cookies

Ingredients
- 150 g flour
- 60 g powdered sugar
- 1 pinch cinnamon
- 2 tbsp cocoa powder
- 100 g soft butter
- flour (for working)
- 200 ml whipping cream (30%)
- 60 g finely grated dark chocolate (70%)
- 20 ml rum
- 75 g finely grated milk chocolate (25%)
- 20 ml cocoa liqueur
- 1 tbsp powdered sugar

Instructions
- 1. Mix the flour with the powdered sugar, cinnamon, and cocoa in a bowl.
- 2. Add the butter in small pieces and knead it quickly into a dough.
- 3. Wrap the dough in cling film.
- 4. Store the dough in the refrigerator for about 30 minutes.
- 5. Preheat the oven to 160 degrees Celsius fan-forced.
- 6. Line a baking tray with baking paper.
- 7. Sprinkle some flour on the work surface.
- 8. Roll out the dough to about 3 millimeters thick.
- 9. Cut out 20 circles with a diameter of 6 cm.
- 10. Place the cookies on the prepared baking tray.
- 11. Bake the cookies in the preheated oven for about 15 minutes.
- 12. Take the cookies out of the oven.
- 13. Carefully loosen the cookies from the tray.
- 14. Let the cookies cool down completely.
- 15. Heat 100 milliliters of cream in a pot.
- 16. Finely chop the dark chocolate.
- 17. Pour 50 milliliters of the hot cream over the chopped chocolate.
- 18. Add the rum.
- 19. Stir the mixture until the chocolate is completely melted.
- 20. Repeat the process with the milk chocolate and the cocoa liqueur.
- 21. Place both chocolate creams in the refrigerator for about 30 minutes.
- 22. Whip the remaining cold cream stiff with the powdered sugar.
- 23. Fill all three creams into piping bags with a plain nozzle.
- 24. Place a dollop of dark chocolate cream on a shortbread cookie.
- 25. Place another shortbread cookie on top.
- 26. Place a dollop of milk chocolate cream on top.
- 27. Place another shortbread cookie on top.
- 28. Place a dollop of whipped cream on top.
- 29. Place another shortbread cookie on top.
- 30. Place a dollop of dark chocolate cream on top.
- 31. Place another shortbread cookie on top.
- 32. Garnish the pastry with a dollop of cream and some dark chocolate cream.
- 33. Repeat the process with the remaining cookies.
- 34. Serve the cookies.
