🍰 Crunchy Chocolate Crème Brûlée

Ingredients
- 1 vanilla pod
- 150 ml milk
- 150 ml whipping cream
- 150 g dark chocolate
- 2 eggs
- 2 egg yolks
- 60 g sugar
- 1 tbsp cornstarch
- 4 tbsp brown sugar
- gold glitter (to taste)
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan-forced.
- 2. Slice the vanilla pod lengthwise.
- 3. Scrape out the vanilla seeds.
- 4. Add the empty pod and the seeds to the milk with the cream.
- 5. Bring the milk mixture to a boil.
- 6. Remove the pan from the heat.
- 7. Chop the chocolate into small pieces.
- 8. Let the chocolate melt in the hot milk.
- 9. Whisk the eggs and egg yolks with the sugar until creamy.
- 10. Whisk the starch into a small amount of the mixture.
- 11. Stir the chocolate milk into the egg mixture in a thin stream.
- 12. Remove the vanilla pod from the cream.
- 13. Pour the cream into four ovenproof ramekins.
- 14. Place the ramekins in a roasting pan or baking dish.
- 15. Pour hot water into the pan until the ramekins are two-thirds submerged.
- 16. Bake the cream in the oven for about 40 minutes until set.
- 17. Remove the ramekins from the oven.
- 18. Let the cream cool down.
- 19. Place the cream in the refrigerator.
- 20. Spread one tablespoon of sugar on each cream before serving.
- 21. Sprinkle some gold dust on the cream.
- 22. Place the ramekins under the hot grill for a short time.
- 23. Wait until the sugar melts and caramelizes.
- 24. Sprinkle the cream with a little more gold.
- 25. Serve the crème brûlée.
