🍰 Chocolate Crème Brûlée

Ingredients
- 2 tbsp cocoa powder
- 1 vanilla pod
- 4 tbsp sugar
- 5 egg yolks
- 200 ml whipping cream
- 200 ml milk
- powdered sugar
- raspberries
Instructions
- 1. Preheat the oven to 150 degrees.
- 2. Split the vanilla pod lengthwise.
- 3. Add the milk and cream to a pot.
- 4. Bring the milk and cream mixture to a boil.
- 5. Stir the cocoa powder into the hot liquid.
- 6. Simmer the mixture for 10 minutes, stirring constantly.
- 7. Let the chocolate liquid cool down slightly.
- 8. Strain the liquid through a fine mesh sieve.
- 9. Whisk the egg yolks and sugar until frothy.
- 10. Stir the egg yolk and sugar mixture into the cooled chocolate liquid.
- 11. Pour the cream into four ramekins.
- 12. Place the ramekins in a roasting pan.
- 13. Pour boiling water into the roasting pan until it reaches halfway up the sides of the ramekins.
- 14. Bake the crème brûlée for 25 minutes in the oven.
- 15. Let the ramekins cool down for 2 hours.
- 16. Dust the surface of the crème brûlée with powdered sugar.
- 17. Caramelize the powdered sugar briefly under the grill.
- 18. Serve the crème brûlée garnished with fresh raspberries.
