  1. 1. Break the chocolate into small pieces.
  2. 2. Place a bowl over a pot of hot water (bain-marie).
  3. 3. Add the chocolate pieces and the nut paste to the bowl.
  4. 4. Stir occasionally until the ingredients are completely melted.
  5. 5. Separate the eggs: Carefully lift the yolk away from the white.
  6. 6. Mix the melted chocolate mixture with the egg yolks.
  7. 7. Whip the cream with a mixer until it is firm.
  8. 8. Add the powdered sugar to the whipped cream.
  9. 9. Gently fold the sweetened cream into the chocolate mixture.
  10. 10. Whip the egg white with a pinch of salt until it forms stiff peaks.
  11. 11. Gently fold the whipped egg white into the chocolate mixture.
  12. 12. Divide the mousse among individual cups.
  13. 13. Place the cups in the refrigerator for at least 2 hours.
  14. 14. Garnish the cold mousse with the meringue drops just before serving.
  15. 15. Sprinkle the sugar pearls on top as a final touch.
