🍽️ Crispy Chicken Schnitzel with Creamy Mashed Potatoes and Fresh Green Beans

Ingredients
- 1 kg floury potatoes
- 80 ml hot milk
- salt
- 1 pinch freshly ground nutmeg
- 4 tbsp butter
- pepper (from the mill)
- 250 g green beans
- 50 g walnut kernels
- 4 chicken schnitzels (approx. 150 g each)

- 150 g breadcrumbs
- 2 eggs
- 2 tbsp whipping cream (min. 30% fat content)
- 3 tbsp flour
- 50 g ghee
- thyme (for garnish)
- lemon wedges (for serving)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with plenty of water.
- 3. Bring the water to a boil and cook the potatoes until tender.
- 4. Cooking time is about 20 to 30 minutes, depending on the size of the potatoes.
- 5. Rinse the green beans under running water.
- 6. Snap off the tough ends of the beans.
- 7. Cut the beans into pieces about 5 centimeters long.
- 8. Finely chop the walnut kernels.
- 9. Wash the chicken schnitzels and pat them dry with kitchen paper.
- 10. Pound the schnitzels slightly to make them thinner.
- 11. Season the schnitzels with salt and pepper.
- 12. Mix the breadcrumbs with the chopped walnuts in a bowl.
- 13. Place the breadcrumb mixture onto a plate.
- 14. Whisk the eggs with the cream in a second bowl.
- 15. Place the egg-cream mixture onto another plate.
- 16. First, coat the schnitzels in the flour.
- 17. Then, dip the floured schnitzels into the egg-cream mixture.
- 18. Finally, press the schnitzels into the breadcrumb mixture until fully covered.
- 19. Heat ghee (clarified butter) in a large frying pan.
- 20. Fry the schnitzels in the hot fat for 2 to 3 minutes on each side until golden brown.
- 21. Meanwhile, cook the beans in plenty of salted water.
- 22. The cooking time for the beans is about 5 to 6 minutes.
- 23. Peel the boiled potatoes as soon as they are cooked.
- 24. Press the still-hot potatoes through a potato ricer.
- 25. Stir the potatoes with the hot milk.
- 26. Season the mashed potatoes with salt.
- 27. Add some grated nutmeg.
- 28. Stir in the butter until it has melted.
- 29. Remove the beans from the cooking water.
- 30. Let the beans drain well.
- 31. Place the mashed potatoes onto the plates.
- 32. Place the beans next to the mash.
- 33. Place the chicken schnitzels on top of the mashed potatoes.
- 34. Finally, season the schnitzels again with salt and pepper.
- 35. Sprinkle fresh thyme leaves over the schnitzels.
- 36. Serve the dish immediately with lemon wedges.
