  1. 1. Wash the peppers thoroughly under running water.
  2. 2. Remove the stem and the inside of the peppers.
  3. 3. Halve the peppers lengthwise.
  4. 4. Carefully remove all white inner membranes and seeds.
  5. 5. Cut the peppers into bite-sized pieces.
  6. 6. Peel the onions completely.
  7. 7. Halve the onions lengthwise.
  8. 8. Cut the onion halves into thin strips.
  9. 9. Peel the garlic cloves.
  10. 10. Slice the garlic into thin rounds.
  11. 11. Heat two tablespoons of oil in a large pan.
  12. 12. Add the onions and garlic to the hot pan.
  13. 13. Sauté the vegetables until they are translucent and soft.
  14. 14. Add the pepper pieces and thyme to the pan.
  15. 15. Add the chili peppers crushed in a mortar.
  16. 16. Fry the vegetables for about six to seven minutes.
  17. 17. Stir the vegetables occasionally while frying.
  18. 18. Season the pepper vegetable mixture with salt to taste.
  19. 19. Pound the schnitzels slightly flatter with a meat mallet.
  20. 20. Season the schnitzels with salt and cayenne pepper.
  21. 21. Heat the remaining oil in a separate pan.
  22. 22. Fry the schnitzels over medium heat.
  23. 23. Fry each schnitzel on each side for about three minutes until golden brown.
  24. 24. Arrange the cooked schnitzels on plates.
  25. 25. Place the pepper vegetables next to the schnitzels.
  26. 26. Serve the dish immediately while warm.
