🍽️ Crispy Chicken Schnitzels with Curry Cream Sauce and Fried Onion Rings

Ingredients
- 400 g vegetable onion
- 200 ml milk
- 120 g flour
- 4 chicken breast fillets
- salt
- curry powder
- 20 g ghee
- 100 ml vegetable broth (instant)
- 100 g whipping cream
- vegetable oil (for frying)
Instructions
- 1. Peel the onions and cut them into thick rings.
- 2. Place the onion rings in a shallow dish.
- 3. Pour the milk over the onion rings.
- 4. Put the flour on a plate.
- 5. Heat plenty of oil in a deep fryer or a deep pot for frying.
- 6. Check the oil temperature by inserting a wooden stick: The oil is ready when small bubbles form.
- 7. Cut the meat lengthwise, but not all the way through.
- 8. Open up the meat to create flat schnitzels.
- 9. Pound the schnitzels a bit flatter.
- 10. Season the meat with salt and curry powder.
- 11. Heat ghee in a pan.
- 12. Fry the chicken schnitzels for 3 minutes on each side over medium heat.
- 13. Pour in the broth and the cream.
- 14. Let the schnitzels simmer over low heat.
- 15. Remove the onions from the milk.
- 16. Let the onions drain.
- 17. Toss the onions in the flour.
- 18. Fry the onion rings in batches in the hot oil.
- 19. Fry the onion rings for 3 to 4 minutes until golden brown.
- 20. Turn the onions occasionally while frying.
- 21. Lift the onions out of the oil.
- 22. Let the onions drain on kitchen paper.
