🍽️ Crispy Schnitzel with Fried Potatoes

Ingredients
- 1 onion
- 100 g streaky bacon
- 800 g waxy potatoes (best if cooked and peeled the day before)
- 1 tbsp ghee

- 4 veal schnitzels (e.g. from the top round, à 160 g)

- 2 eggs
- 2 tbsp heavy cream
- 3 tbsp flour
- 200 g breadcrumbs
- 6 tbsp ghee
Instructions
- 1. Peel the onion and chop it very finely.
- 2. Cut the bacon into small cubes.
- 3. Slice the pre-cooked potatoes into even slices that are not too thin.
- 4. Heat the butter in a large, hot, and preferably non-stick pan.
- 5. Place the potato slices flat in the pan.
- 6. Fry the potatoes over medium heat for 3 to 4 minutes until golden brown.
- 7. Shake the pan to turn the potatoes until they are lightly browned.
- 8. Add the bacon cubes to the potatoes and fry them together.
- 9. Turn the mixture occasionally until the potatoes have formed a golden brown crust.
- 10. Sprinkle the chopped onions over them.
- 11. Fry the onions for about 5 minutes until golden brown, stirring occasionally.
- 12. Season the potato mixture with salt and pepper.
- 13. Rinse the schnitzels under running water.
- 14. Pat the schnitzels dry with kitchen paper.
- 15. Pound the schnitzels flat with a meat mallet.
- 16. Season the schnitzels generously with salt and pepper.
- 17. Whisk the eggs with the cream in a shallow dish.
- 18. Coat the meat in a dish with flour until it is completely covered.
- 19. Dip the floured meat into the egg-cream mixture.
- 20. Bread the meat with the breadcrumbs.
- 21. Press the breading down lightly.
- 22. Heat clarified butter in a large pan over medium heat.
- 23. Fry the schnitzels in the clarified butter for about 3 to 4 minutes per side until golden brown.
- 24. Baste the schnitzels repeatedly with the hot fat while frying.
- 25. Let the finished schnitzels drain on kitchen paper.
- 26. Plate the schnitzels with the fried potatoes.
- 27. Serve the dish with a fresh cucumber salad if desired.
