  2. 2. Whisk together vegetable broth, vinegar, oil, and mustard in a bowl. Season the mixture with salt, pepper, and a pinch of sugar. Now mix the dressing with the warm potato slices and the onions.
  3. 3. Pound the schnitzel slightly flat, then season with salt and pepper. Cut it into 10 narrow strips. Coat the strips first in flour, then in beaten egg, and finally in breadcrumbs.
  4. 4. Heat clarified butter in a frying pan. Fry the breaded schnitzel strips until they are golden brown and crispy.
  5. 5. Fold chopped chives into the potato salad. Serve the bites on large spoons, top with the schnitzel pieces, and serve with lemon wedges.
