  1. 1. Squeeze the lemons and mix 6 tablespoons of juice with 250 milliliters of water and the raw cane sugar in a pot.
  2. 2. Bring the mixture to a boil and stir until the sugar has completely dissolved.
  3. 3. Let the resulting syrup cool down.
  4. 4. Put the frozen strawberries and the cooled syrup into a stand mixer.
  5. 5. Puree the mixture until smooth.
  6. 6. Season the puree with the remaining lemon juice.
  7. 7. Pour the puree into a shallow stainless steel dish.
  8. 8. Place the dish in the freezer compartment for 15 minutes.
  9. 9. Shape the sorbet into balls using an ice cream scoop.
  10. 10. Serve the sorbet immediately.
