🍰 Quick Coconut Cake

Ingredients
- 200 g flour
- 200 g sugar
- 0.5 packet baking powder
- 250 ml buttermilk
- 2 eggs
- 50 g coconut flakes
- 300 g small ripe mango (1 small ripe mango)
- 100 g yogurt (1.5% fat)
- 2 passion fruits
Instructions
- 1. Mix flour, 150 grams of sugar, and baking powder in a large bowl.
- 2. Whisk buttermilk and eggs thoroughly in a separate bowl.
- 3. Stir the buttermilk and egg mixture into the flour mixture until a smooth batter forms.
- 4. Line a square baking pan (24x24 cm) with baking paper.
- 5. Pour the batter into the pan and smooth it out with a rubber spatula.
- 6. Mix coconut flakes and the remaining sugar in a small bowl.
- 7. Sprinkle the coconut-sugar mixture evenly over the batter.
- 8. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2-3).
- 9. Bake the cake on the middle rack for 20 to 25 minutes.
- 10. Peel the mango and cut the flesh into cubes.
- 11. Stir the mango cubes into the yogurt until the mixture is smooth.
- 12. Halve the passion fruits and scoop out the pulp with a teaspoon.
- 13. Add the passion fruit pulp to the yogurt-mango mixture.
- 14. Serve the warm cake with the yogurt-mango topping.
