Ingredients
- 500 g fresh tortellini (with spinach filling)
- 1 onion
- 1 garlic clove
- 1 tsp butter
- 0.125 l white wine
- 0.125 l vegetable broth
- 250 g whipping cream
- 1 processed cheese slice
- 20 g grated parmesan
- 300 g arugula
- salt (pepper; nutmeg)
Instructions
- 1. Peel the onion and the garlic clove.
- 2. Finely chop the onion and garlic.
- 3. Heat the butter in a pan.
- 4. Sauté the onion and garlic mixture in the butter.
- 5. Deglaze the pan with wine.
- 6. Add the broth.
- 7. Let the liquid reduce until it has halved.
- 8. Remove three tablespoons of the sauce.
- 9. Set aside these three tablespoons.
- 10. Pour the cream into the remaining sauce.
- 11. Bring the sauce to a boil.
- 12. Melt the processed cheese into the hot cream.
- 13. Stir in the Parmesan cheese.
- 14. Let the sauce reduce again.
- 15. Season the sauce with salt and pepper.
- 16. Cook the tortellini according to the package instructions.
- 17. Drain the tortellini.
- 18. Clean the arugula.
- 19. Wash the arugula.
- 20. Cut the arugula into thin strips.
- 21. Mix the tortellini with the cheese sauce.
- 22. Fold in the arugula strips.
- 23. Drizzle the three tablespoons of reserved broth over the dish.
- 24. Season the dish with nutmeg.
