  7. 7. Let the liquid reduce until it has halved.
  8. 8. Remove three tablespoons of the sauce.
  9. 9. Set aside these three tablespoons.
  10. 10. Pour the cream into the remaining sauce.
  11. 11. Bring the sauce to a boil.
  12. 12. Melt the processed cheese into the hot cream.
  13. 13. Stir in the Parmesan cheese.
  14. 14. Let the sauce reduce again.
  15. 15. Season the sauce with salt and pepper.
  16. 16. Cook the tortellini according to the package instructions.
  17. 17. Drain the tortellini.
  18. 18. Clean the arugula.
  19. 19. Wash the arugula.
  20. 20. Cut the arugula into thin strips.
  21. 21. Mix the tortellini with the cheese sauce.

  23. 23. Drizzle the three tablespoons of reserved broth over the dish.
  24. 24. Season the dish with nutmeg.
