🍲 Quick Vegetable Soup with Apple

Ingredients
- 400 g cauliflower florets
- 1 apple
- 2 carrots
- 400 g kohlrabi
- 1 tbsp olive oil
- 800 ml vegetable broth
- curry powder
- salt
- pepper
- apple cider vinegar
Instructions
- 1. Wash the cauliflower thoroughly and let it drain well.
- 2. Wash the apple, cut it into quarters, and remove the core.
- 3. Cut the apple into small cubes.
- 4. Peel the carrots and the kohlrabi.
- 5. Cut the carrots and kohlrabi into small cubes as well.
- 6. Save a few green leaves from the kohlrabi for garnish.
- 7. Heat the olive oil in a large pot.
- 8. Add the chopped vegetables and apple cubes to the pot.
- 9. Sauté the vegetables and apple for 2 to 3 minutes over medium heat.
- 10. Pour in the vegetable broth.
- 11. Bring the soup to a boil.
- 12. Let the soup simmer for 10 to 12 minutes over medium heat.
- 13. Season the soup to taste with curry powder, salt, pepper, and apple cider vinegar.
- 14. Serve the soup garnished with the reserved kohlrabi leaves.
