  2. 2. Wash the apple, cut it into quarters, and remove the core.
  3. 3. Cut the apple into small cubes.
  4. 4. Peel the carrots and the kohlrabi.
  5. 5. Cut the carrots and kohlrabi into small cubes as well.
  6. 6. Save a few green leaves from the kohlrabi for garnish.
  7. 7. Heat the olive oil in a large pot.
  8. 8. Add the chopped vegetables and apple cubes to the pot.
  9. 9. Sauté the vegetables and apple for 2 to 3 minutes over medium heat.
  10. 10. Pour in the vegetable broth.
  11. 11. Bring the soup to a boil.
  12. 12. Let the soup simmer for 10 to 12 minutes over medium heat.
  13. 13. Season the soup to taste with curry powder, salt, pepper, and apple cider vinegar.
  14. 14. Serve the soup garnished with the reserved kohlrabi leaves.
