Ingredients
- 4 eggs (M)
- 1 onion
- 2 sprigs tarragon (or 1/2 tsp dried tarragon)
- 125 g young spinach leaves
- 1 tbsp oil
- 150 ml soy cream
- 2 tbsp coarse mustard
- salt
- pepper
- Tabasco
Instructions
- 1. Poke the eggshells with a needle.
- 2. Place the eggs in boiling water.
- 3. Cook the eggs for 6 to 7 minutes until soft-boiled.
- 4. Peel the onion.
- 5. Dice the onion finely.
- 6. Wash the tarragon.
- 7. Shake the tarragon dry.
- 8. Pluck the tarragon leaves off the stems.
- 9. Finely chop the tarragon leaves.
- 10. Wash the spinach in cold water.
- 11. Let the spinach drain well.
- 12. Heat oil in a pan.
- 13. Sauté the onion cubes in the hot oil.
- 14. Stir the soy cream into the onions.
- 15. Bring the mixture to a boil.
- 16. Add the spinach to the sauce.
- 17. Cook the sauce with the spinach for 2 minutes.
- 18. Stir the mustard into the sauce.
- 19. Stir the chopped tarragon into the sauce.
- 20. Season the sauce with salt.
- 21. Season the sauce with pepper.
- 22. Add a few dashes of Tabasco sauce to the sauce.
- 23. Drain the cooking water from the eggs.
- 24. Rinse the eggs briefly with cold water.
- 25. Peel the eggs.
- 26. Heat the peeled eggs in the mustard sauce.
- 27. Serve the Senfeier with mashed potatoes.
