Ingredients
- 8 sole fillets (100 g each)
- 2 tbsp lemon juice
- salt
- pepper (from the mill)
- 30 g crab butter
- 30 g flour
- 50 ml white wine
- 250 ml water
- 50 ml whipping cream
- 100 g crabs
- 1 spring onion
- 2 tomatoes
Instructions
- 1. Pour boiling water over the tomatoes briefly.
- 2. Shock them immediately in cold water.
- 3. Remove the skin from the tomatoes.
- 4. Halve the tomatoes.
- 5. Remove the core.
- 6. Dice the flesh into small cubes.
- 7. Wash the spring onions.
- 8. Trim off the dry ends of the spring onions.
- 9. Slice the spring onions into thin rings or small pieces.
- 10. Drizzle lemon juice over the turbot fillets.
- 11. Season the fillets with salt and pepper.
- 12. Roll the fillets up tightly.
- 13. Place the rolls in a bowl.
- 14. Knead the crab butter with flour into a paste.
- 15. Crumble the mixture in coarse flakes over the fillets.
- 16. Add wine, water, cream, crab meat, spring onions, and tomatoes.
- 17. Mix everything well.
- 18. Cover the bowl.
- 19. Cook the mixture in the microwave at 850 watts for about 8 minutes.
- 20. Carefully remove the fish fillets from the sauce.
- 21. Stir the sauce smooth with a spoon.
- 22. Adjust the seasoning of the sauce with salt and pepper to taste.
- 23. Pour the finished sauce over the fillets.
