Ingredients
- 1 small onion
- 1 clove garlic
- 1 sprig thyme
- 1 tsp olive oil
- 300 g mixed vegetables (frozen)
- 600 ml classic vegetable broth
- 1 bay leaf
- salt
- pepper
- 1 small tomato
- 30 g arugula (0.5 bunch)
Instructions
- 1. Peel the onion and the garlic.
- 2. Dice the onion finely.
- 3. Dice the garlic finely.
- 4. Wash the thyme sprigs.
- 5. Shake the thyme dry.
- 6. Heat the oil in a pot.
- 7. Add the onion to the pot.
- 8. Add the garlic to the pot.
- 9. Add the thyme to the pot.
- 10. Sauté the vegetables while stirring for 2 minutes.
- 11. Add the soup vegetables to the pot.
- 12. Add the broth to the pot.
- 13. Add the bay leaf to the pot.
- 14. Salt the soup.
- 15. Pepper the soup.
- 16. Bring the soup to a boil.
- 17. Cover the pot.
- 18. Let the soup simmer for about 20 minutes over low heat.
- 19. Wash the tomato.
- 20. Cut out the stem area of the tomato in a wedge shape.
- 21. Dice the tomato.
- 22. Wash the arugula.
- 23. Shake the arugula dry.
- 24. Remove the thick stems from the arugula.
- 25. Cut the arugula leaves crosswise into strips.
- 26. Add the diced tomatoes to the minestrone.
- 27. Add the arugula to the minestrone.
- 28. Let the ingredients steep in the soup for 2 minutes.
- 29. Season the soup with salt.
- 30. Season the soup with pepper.
