🍰 Quick Lime Coconut Macaroons

Ingredients
- 1 organic lime
- 150 g coconut flakes
- 4 level tbsp flour
- 3 egg whites
- 1 pinch salt
- 150 g powdered sugar (from cane sugar)
- 50 baking wafers (40 mm Ø)
Instructions
- 1. Rinse the lime under hot water and dry it.
- 2. Finely grate the lime zest.
- 3. Mix the lime zest with the coconut flakes and flour in a bowl.
- 4. Squeeze the lime and reserve exactly one teaspoon of juice.
- 5. Separate the eggs and use the yolks for another purpose.
- 6. Beat the egg whites, salt, and lime juice stiffly with a hand mixer.
- 7. Slowly sprinkle in the sugar and continue beating until glossy stiff peaks form.
- 8. Gently fold the coconut-flour mixture into the egg whites using a rubber spatula.
- 9. Line a baking sheet with baking paper.
- 10. Place the wafer biscuits on the tray, leaving about five millimeters of space between them.
- 11. Fill the mixture into a piping bag with a large round tip.
- 12. Pipe the mixture onto the wafers, leaving a small border around the edges.
- 13. Let the macaroons dry at room temperature for six hours.
- 14. Preheat the oven to 175 degrees Celsius conventional heat (150 degrees Celsius fan or gas mark 2).
- 15. Bake the macaroons on the second rack from the bottom for eight to twelve minutes.
- 16. Remove them as soon as the surface turns very lightly brown.
- 17. Let the macaroons cool on a wire rack.
