🍽️ Quick Chicken Schnitzels

Ingredients
- 3 flesh tomatoes
- 1 bunch parsley
- 1 large shallot
- 250 g chicken breast fillet
- salt
- pepper
- 1 tbsp rapeseed oil
- 100 ml Marsala
- 100 ml poultry broth
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Halve the tomatoes and gently squeeze out the seeds.
- 3. Wash the parsley and shake it dry.
- 4. Finely chop the parsley.
- 5. Peel the shallot.
- 6. Finely chop the shallot.
- 7. Rinse the chicken breast fillet.
- 8. Pat the fillet dry with a kitchen towel.
- 9. Slice the fillet thinly at a slight angle.
- 10. Place the meat slices between two layers of cling film.
- 11. Flatten the meat by placing a heavy pan or meat mallet on top.
- 12. Season the flat schnitzels with salt and pepper.
- 13. Heat a pan.
- 14. Sear the tomato halves without fat on the cut side over high heat.
- 15. Remove the tomatoes from the pan and set them aside.
- 16. Add the oil to the hot pan.
- 17. Fry the chicken schnitzels for about 1 minute on each side in the hot oil.
- 18. Remove the cooked schnitzels from the pan.
- 19. Add the shallots and tomatoes to the pan.
- 20. Sauté the vegetables for 1 minute.
- 21. Pour the Marsala wine into the pan.
- 22. Add the broth.
- 23. Let the sauce simmer for 2 to 3 minutes.
- 24. Return the chicken schnitzels and parsley to the pan.
- 25. Warm everything up briefly together.
- 26. Finally, adjust the sauce to taste with salt and pepper.
