Ingredients
- 4 cod fillets (each 200 g)
- 2 onions
- 2 large tomatoes
- 4 tbsp olive oil
- 80 g black olives (pitted)
- salt
- pepper
- 0.5 tsp dried thyme
- 0.5 tsp dried oregano
- 0.5 bunch parsley (10 g)
Instructions
- 1. Rinse the fish fillets under cold water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Cut the fish into bite-sized pieces.
- 4. Peel the onion.
- 5. Slice the onion into about half-centimeter thick slices.
- 6. Wash the tomatoes.
- 7. Remove the hard stem ends from the tomatoes.
- 8. Cut the tomatoes into coarse cubes.
- 9. Heat the oil in a pan.
- 10. Fry the onion slices over medium heat for about five minutes.
- 11. Add the fish pieces to the pan.
- 12. Add the tomato cubes to the pan.
- 13. Add the olives to the pan.
- 14. Season the dish with salt.
- 15. Season the dish with pepper.
- 16. Add the herbs to the pan.
- 17. Simmer the dish over low heat for about ten minutes.
- 18. Wash the parsley.
- 19. Shake the parsley dry.
- 20. Pluck the parsley leaves from the stems.
- 21. Chop the parsley leaves coarsely.
- 22. Serve the fish pan onto plates.
- 23. Sprinkle the dish with the chopped parsley.
