  1. 1. Beat the egg whites with a mixer or whisk until they form stiff peaks.
  2. 2. Slowly stir the powdered sugar into the egg whites.
  3. 3. Continue beating the mixture until it looks firm and shiny.
  4. 4. Slice the vanilla pod lengthwise.
  5. 5. Scrape out the tiny vanilla seeds from the pod.
  6. 6. Add the milk, sugar, vanilla seeds, and the empty pod to a saucepan.
  7. 7. Bring the milk mixture to a boil.
  8. 8. Remove the saucepan from the heat.
  9. 9. Remove the vanilla pod from the milk.
  10. 10. Add the chocolate to the warm milk.
  11. 11. Stir until the chocolate has completely melted.
  12. 12. Add the pistachios to the chocolate sauce.
  13. 13. Blend the sauce with a hand blender until smooth.
  14. 14. Pour the warm sauce into small bowls.
  15. 15. Place the egg white mounds (snow eggs) on top of the sauce.
  16. 16. Sprinkle some cinnamon over the eggs.
  17. 17. Serve the dish immediately.
