🍰 Airy Egg White Dumplings on Caramelized Fruit

Ingredients
- 1 ripe mango
- 250 g strawberries
- 1 star fruit
- 1 tsp sugar
- 1 packet vanilla sugar
- 1 sprig lemon balm
- 4 egg whites
- 125 g sugar
- 2 tsp lemon juice
- 0.3 l milk
- powdered sugar (for dusting)
Instructions
- 1. Peel the mango and cut the flesh into thin strips.
- 2. Remove the stems from the strawberries and halve them.
- 3. Slice the starfruit into thin rounds.
- 4. Place the prepared fruit into a bowl.
- 5. Sprinkle the fruit with sugar, half of the vanilla sugar, and a splash of lemon juice.
- 6. Let the fruit marinate briefly to develop its flavors.
- 7. Add the egg whites and the remaining lemon juice to a mixing bowl.
- 8. Beat the egg whites with a mixer until stiff peaks form.
- 9. Slowly add 25 grams of sugar and the remaining vanilla sugar to the foam.
- 10. Bring the milk to a boil in a wide pot while stirring constantly.
- 11. Remove the pot from the heat so the milk stops bubbling.
- 12. Scoop portions of the egg white foam using two soup spoons.
- 13. Place the dumpling portions into the hot milk.
- 14. Cook the dumplings for about 3 minutes on one side.
- 15. Turn the dumplings and cook for another 3 minutes on the other side.
- 16. Remove the finished dumplings with a slotted spoon.
- 17. Place the dumplings on a kitchen towel to absorb excess liquid.
- 18. Place the remaining sugar into a non-stick pan.
- 19. Melt the sugar while stirring until it turns golden brown and caramelized.
- 20. Arrange the fruit salad on the plates.
- 21. Place the egg white dumplings on top of the fruit.
- 22. Dip the dumplings briefly into the hot caramel.
- 23. Drizzle thin caramel strands over the dish using the spoon.
- 24. Garnish the dish with fresh lemon balm.
- 25. Finally, dust everything with powdered sugar.
