  1. 1. Peel the mango and cut the flesh into thin strips.
  2. 2. Remove the stems from the strawberries and halve them.
  3. 3. Slice the starfruit into thin rounds.
  4. 4. Place the prepared fruit into a bowl.
  5. 5. Sprinkle the fruit with sugar, half of the vanilla sugar, and a splash of lemon juice.
  6. 6. Let the fruit marinate briefly to develop its flavors.
  7. 7. Add the egg whites and the remaining lemon juice to a mixing bowl.
  8. 8. Beat the egg whites with a mixer until stiff peaks form.
  9. 9. Slowly add 25 grams of sugar and the remaining vanilla sugar to the foam.
  10. 10. Bring the milk to a boil in a wide pot while stirring constantly.
  11. 11. Remove the pot from the heat so the milk stops bubbling.
  12. 12. Scoop portions of the egg white foam using two soup spoons.
  13. 13. Place the dumpling portions into the hot milk.
  14. 14. Cook the dumplings for about 3 minutes on one side.
  15. 15. Turn the dumplings and cook for another 3 minutes on the other side.
  16. 16. Remove the finished dumplings with a slotted spoon.
  17. 17. Place the dumplings on a kitchen towel to absorb excess liquid.
  18. 18. Place the remaining sugar into a non-stick pan.
  19. 19. Melt the sugar while stirring until it turns golden brown and caramelized.
  20. 20. Arrange the fruit salad on the plates.
  21. 21. Place the egg white dumplings on top of the fruit.
  22. 22. Dip the dumplings briefly into the hot caramel.
  23. 23. Drizzle thin caramel strands over the dish using the spoon.
  24. 24. Garnish the dish with fresh lemon balm.
  25. 25. Finally, dust everything with powdered sugar.
